This is the easiest salad you will ever make and the Lemon Dijon dressing is even easier.
The key to making this salad delicious is choosing quality ingredients. Vegetables taste better when the are fresh, bottom line. So hit up your local farmers market before you drench your lunch in bottled dressing. EW.
I always plug my local produce provider, From the Farmer. Every week I am blown away by the quality of fresh local produce I receive on my doorstep. The golden tomatoes in my basket this week were the most flavorful tomatoes I have ever had in my life!
- 1 cooked corn on the cob (cut off)
- 1/2 cup cucumber
- 1/2 cup of sun gold tomatoes (or grape sized tomatoes)
- 1/2 avocado
- 1 chubby slice of mozzarella chopped into bits
- Optional protein: I used fresh grilled Rockfish (caught by my dad!)
Lemon Dijon Dressing:
- Juice from half a lemon
- 1 Tbsp Whole Grain Dijon Mustard (I use Trader Joe’s version)
- 1-2 Tbsp Olive Oil
I use my Dijon on almost everything. It’s the perfect amount of spice for my salads. I have a strong sweet tooth but I like to keep sugar away from my main meals, it makes my brain light up like a true addict. I save my sweets for after or between meals. It works for me. If you prefer a sweeter dressing, add a drizzle of honey to the ingredients above!
Salads are pretty intuitive, I figure you won’t need instructions on this one. Just mix and enjoy! This salad kept me full until about 6:00 pm. For dinner I had a Green Smoothie… and a handful of peanut M&Ms and headed off to my last client of the day.
